Prepare the Baking Sheet

Line a cookie sheet with parchment paper.

Arrange Ritz crackers in a single layer (you may need multiple sheets).

Make the Caramel

In a small saucepan, combine sweetened condensed milk, butter, and brown sugar.

Cook over medium heat for 7–8 minutes, stirring often, until sugar dissolves and mixture thickens.

Add Flavor & Nuts

Reduce heat to low.

Whisk in milk, vanilla, and chopped peanuts.

Cook for 2 more minutes, stirring until well combined.

Remove from heat.

Assemble the Cookies

Spoon or scoop a dollop of warm caramel-peanut mixture onto each Ritz cracker.

Cool & Set

Let cookies cool completely at room temperature until caramel is firm.
