Coconut Banana Peel Curry Over Fluffy Rice

Instructions

 

 

1. Prep the Banana Peels

  • Peel bananas and reserve the fruit for another use.

  • Soak peels in hot salted water for 30 minutes to reduce bitterness.

  • Cut into thin strips.

2. Cook the Rice

  • Rinse rice well.

  • In a pot, combine coconut milk and water (enough to cover rice by 2 cm).

  • Bring to a boil, then simmer covered until cooked.

3. Make the Curry

  • Heat oil in a pan.

  • Add turmeric, cumin, and coriander; toast for 1 minute.

  • Add onion, garlic, and ginger. Cook until soft.

  • Add banana peel strips; stir-fry for 5 minutes.

  • Pour in vegetable broth. Cover and simmer until peels are tender.

4. Serve

  • Fluff the rice and serve with banana peel curry.

  • Garnish with fresh cilantro.

  • Control heat: Add chili for spice.

  • Serve with sides: like cucumber salad or raita.
