Chicken Adobo Recipe

 

1. Marinate the Chicken
Combine soy sauce, vinegar, garlic, onion, bay leaves, pepper, and sugar. Add chicken and toss to coat. Marinate for 30 minutes to 2 hours.

2. Cook the Chicken
Heat oil in a large pot or skillet. Fry chicken pieces 2–3 minutes per side until browned.

3. Simmer
Add remaining marinade and water/broth. Bring to a boil, then lower heat, cover, and simmer 30–40 minutes until tender. Add water if sauce reduces too much.

4. Finish and Serve
Adjust seasoning, remove bay leaves, and serve over steamed rice. Garnish with cilantro if desired.
